Rice Pudding

Ingredients


Three cups of cooked long-grain rice

Two cups of soy or almond milk

¼ cup sweetener (maple)

One cup of raisins

1 3-inch stick cinnamon

1 tsp vanilla

½ tsp nutmeg

1 tsp cinnamon

¼ tsp sea salt


Preparation


  1. Cook all ingredients on a low flame for about 45 minutes until the raisins are plump and the pudding creamy.

  2. Allow it to cool and keep in a glass container with a lid in the fridge, warm-up or serve cold depending on the season.

  3. Pour a little plant milk on top with a sprinkle of cinnamon.

  4. Another way to cook rice pudding would be to cook the raisins covered in water until softened.

  5. Mix all the ingredients with the raisins in a baking dish, cover with foil and bake for 45 minutes to an hour at 350 degrees.
